Today, I said to Wiley, "I think I'd like to make chicken tetrazzini with the leftovers from the other night for dinner. Sound good?" And he says back "Yeah! Sounds great!" So I call my mom to try and get the recipe, and leave a message, asking her to call me back.

Later in the day, Wiley asks if I talked to my mom, and I tell him I had, and gotten the recipe. And he says "Great, 'cause I'm looking forward to tetrazzini." Something in the way he says this makes me think that he actually doesn't *know* what it is I'm planning for dinner, so I ask him. And he answers "Ummm, chicken, tetras and zini's?"

That's what I mean about loving his enthusiasm. Even for the small things, he just assumes it'll be great. It makes me smile.

Essentially, spaghetti, chicken, mushrooms baked in a wine-laced white sauce, with parmesan cheese on top. Very simple, but very yummy!

Oooh, that sounds good. Maybe I should try to make that at some point. I could probably find something to substitute for the chicken.

I don't know how it would work with veggies, or tofu. But you could try it. It might actually probably be yummy with broccoli.

Yay broccoli!!! I should have made that yesterday night instead of the monstrosity that became dinner. At least the strawberry shortcake came out well!

Next time I will! :) The strawberries were on sale and everything. I should go back and get some more while they're still in season in Florida.
