Calling yummy recipes!
Feb. 18th, 2003 12:33 pmSo, we have this delightful neighbor that not once, but twice came by and ran his snowblower through the enormous piles of snow in our driveway. I'd like to make him some cookies, or other yummy baked treat to say thank you, but I lack any tried-and-true recipes that I know will turn out well.
So, anyone out here in LJ land have anything they would recommend?

This apple crisp recipe from Epicurious.com is great...

4 tablespoons cold unsalted butter, cut into pieces
1/2 cup packed light-brown sugar
1/2 cup all-purpose flour
1/2 cup rolled oats
1 teaspoon ground cinnamon
1/2 cup chopped walnuts
Filling:
4 apples, peeled, cored and cut into 1/2-inch dice
2 tablespoons fresh lemon juice
Vanilla ice cream or heavy cream, for serving (optional)
1. Preheat the oven to 350°F. Butter an 8-inch square baking dish.
2. For topping, combine the butter, sugar, flour, oats and cinnamon in a bowl. Work together with fingertips until mixture resembles coarse meal. Toss in nuts; set aside.
3. Toss the apples with lemon juice and spoon into the baking dish. Sprinkle topping evenly over the apples. Bake in center of the oven for 1 hour or until bubbly and the apples are tender. Let cool slightly. Serve warm, topped with ice cream or cream, if desired.
Makes 6 servings.
Per serving (without ice cream): 290 calories, 38g carbohydrates, 15g fat, 4g protein, 21mg cholesterol.

Date: 2003-02-18 10:37 am (UTC)i just don't put rasins and salt. and its pretty good everytime. just have to be careful not to let it cook too long. or you can also substitute 1/2 cup of applesauce instead of the 2 sticks of butter. it tastes just as sweet, if not sweeter.
plus it cuts the calorie content in half.

2 cups sugar (you pick what kind)
1 tsp vanilla
1/2 cup milk
4 tBsp cocoa powder (sweetened works fine).
Mix together, boil hard for one minute.
Take off heat.
Add 3 cups of quick oats and 1/3 cup of peanut butter
Spoon onto, you guessed it, wax paper or tinfoil and allow to harden. In my house, it makes 10 fist sized cookies, and one yummy spatula.

3 c. white sugar
5 eggs
3 c. flour
2 tsp. lemon x-tract
3/4 c. 7-up or sprite
Mix butter and sugar for 10-20 minutes.
Add eggs and mix.
Add flour and x-tract and mix.
Fold in the soda.
Bake in greased and floured bundt pan at 320f. for 1 hour.
(I usually cover it with foil for the first half hour.)

1/2 cup granulated sugar
1/2 cup packed brown sugar
1 tsp baking soda
1/2 tsp salt
1/2 cup shortening/margarine
1/2 cup peanut butter
2 tbsp milk
1 tsp vanilla extract
1 egg
Granulated sugar
48 Hershey Kisses, unwrapped
Preheat oven to 375.
Combine flour, 1/2 cup granulated sugar, brown sugar, baking soda,
salt, shortening, peanut butter, milk, vanilla, and egg until a stiff dough forms. Shape into 1-inch balls; roll each ball in granulated sugar.
Place the balls 2 inches apart on ungreased cookie sheets. Bake for 10 to 12 minutes or until golden brown.
Remove the cookie sheets from the oven and immediately top each cookie with a chocolate kiss, pressing down firmly so the cookie cracks around the edge. Cool cookies on wire rack.

Date: 2003-02-18 04:18 pm (UTC)Or if you want something more cookie like take one box of golden grahms, one bag of marshmellows, and 2 cups of chocolate chips, melt the chocolate and the marshmellows together, mix in the golden grahms, spread out on a cookie sheet or in a shallow cake pan, allow to harden, and cut. It's like Rice Crispy treats, but a nice change on the classic.
