I tried making a pot roast today. It came out pretty damn good, although I think it should have cooked a bit longer... it didn't quite have the melt-in-the-mouth texture I wanted. Actually, some parts of it did, other parts didn't, so I think it didn't quite cook evenly. Boiled down the cooking liquid (beef stock, chicken stock and water with carrots, celery, onion and garlic) to make a sauce, and then served it with rice and wax beans. Very nice. Topped of with just a smidge of Edy's Thin Mint girl scout cookie ice cream. Mmmmmmm
