It's like the reason my mom never baked cookies when we were kids - all that work, and my dad would eat them by the handful, making them disappear in an evening.
Well, I think there's certainly degrees of effort and waste. If you compare cookies and cake, for instance.
Same time mixing batter.
Cake: pour into pan(s), bake unattended for X minutes, take out and cool. Cookies: scoop each little cookie onto tray. put in oven for 12 minutes, but don't go sit, because you should switch sheet positions halfway through baking. take out trays, transfer cookies to wire rack. scoop more cookies onto sheets, repeat.
Cake: Even an enthusiastic eater like my dad would likely not have more than two pieces of cake in a night (one for dessert, one with tv later). Cake lasts 3-4 days, depending. Cookies: Everyone who wanders through the kitchen grabs a couple (or more) cookies as they walk through. no one feels piggy getting up 6 times in an evening for 2 (or more) cookies at a time. Cookies last 2 days, depending.
The only really fiddly bit I can see is getting the stuffing into the olives... and I don't see why you couldn't use a piping bag or somesuch to do that.
